Rubarb Bread Pudding with Lemon Sauce

Ingredients:

  • 6 slices white bread cut into cubes
  • 4 cups fresh rhubarb
  • 5 eggs
  • 1 1/2 cups sugar
  • 1/2 cup cream
  • 1/4 cup melted butter
  • Touch of nutmeg or cinnamon
  • LEMON SAUCE:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 1/2 teaspoon lemon juice
  • 2 tablespoons butter or margarine
  • 1 cup water

Spary a 9 x 9 pan with non-stick cooking spray. In a bowl mix eggs, sugar, cream, and butter until blended. Pour over bread cubes and rhubarb in pan. Bake in a water bath at 350 degrees for about 45 - 60 minutes. About halfway through stir the bread pudding, bringing the outside to the center to insure even baking. Bread pudding is done when a knife inserted near the center comes out clean.
LEMON SAUCE: Mix sugar and cornstarch. Gradually add water stirring until sugar is mostly dissolved. Bring to a boil and boil 5 minutes stirring constantly. Add butter and lemon juice. Serve warm over bread pudding.
