Baked French Toast with Apple Cider Syrup


  • 1 loaf French Bread
  • 12 eggs
  • 1 1/2 cups milk or cream
  • 1/2 cup maple syrup
  • 1/4 cup melted butter
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts
  • 1/2 cup sugar
  • 4 teaspoons cornstarch
  • 1/2 teaspoon each cinnamon and nutmeg
  • 1 1/2 cups apple cider or apple juice
  • 1 tablespoon lemon juice
  • 1/4 cup butter

Spray a 9 x 13 pan with non-stick cooking spray. Cut or tear bread into about 1 1/2" cubes. Blend eggs, maple syrup, milk or cream and melted butter and pour over bread cubes. Be sure to coat all cubes. Let stand at least 30 minutes or overnight. Bake at 350 degrees approximately 1 hour. While baking, prepare topping and spread over bread cubes approx. 20 minutes before French Toast is done. FOR SYRUP: Mix the sugar, cornstarch & spices. Blend in the apple juice or cider and lemon juice. Cook on stove top on medium heat or in microwave until thick and bubbly. Stir in 1/4 cup butter. Serve warm.

*Note* I normally double the syrup so I have plenty. Leftover syrup is great on pancakes or ice cream.

Variations: You could add an 8 oz. cream cheese cubes to the bread cubes. You can also simply slice the toast and place it in the pan on edge. If I'm doing the sliced variety I do not add the cream cheese.
