Pumpkin Bread


  • 4 1/2 cups all purpose flour
  • 2 tablespoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 eggs
  • 4 cups sugar
  • 1 cup vegetable oil
  • 1 can solid pack pumpkin or 2 cups fresh cooked pumpkin

In large bowl combine flour, pumpkin pie spice, baking soda and salt. In small mixer bowl beat eggs; beat in sugar, oil and pumpkin. Pour pumpkin mixture over flour mixture and stir until moistened. Spoon batter into 4 greased and floured 8 x 4 inch pans. Bake in pre-heated 350 degree oven 60 minutes or until a wooden toothpick comes out clean. Cool on rack 5 - 10 minutes and remove from pan.

*NOTE I use the fresh pumpkin and blend it in a blender or food processor with the eggs and oil so it is smooth. Recipe can be halved.

*Note This bread is great as is, or with added chocolate chips, cranberries or nuts. For an extra taste treat serve with apple butter.
