Quick & Easy Rhubarb Cake

Ingredients:

Crean brown sugar and margarine. Add egg and sour milk or buttermilk. Sift dry ingredients and add to mixture. beat til blended in. Add vanilla. Fold in rhubarb. Put into a greased & floured 9 x 13 pan. Mix the sugar & cinnamon together and sprinkle over top of the cake. Do not stir in. Bake at 350 degrees about 35 minutes. The sugar/cinnamon topping makes the top of the cake slightly cripsy when done.
Note: This is a very moist and tasty cake. Great served warm with ice cream or whipped cream.
