Peach Cobbler, Gluten free, Low Sugar or Regular


  • 1 stick oleo
  • 1 cup sugar
  • 1 cup rice flour
  • 2 tsp baking powder
  • 1 teaspoon Xanthan Gum
  • 3/4 cup milk
  • 1 large can sliced peaches w/ juice
  • 3/4 cup sugar
  • cinnamon

Melt the oleo in a 9 x 12 pan. In another mixing bowl combine the sugar, rice flour, baking powder and Xanthan Gum. Add milk and stir. Pour over melted oleo. DON'T STIR. Pour peaches and juice over all and sprinkle sugar over the top. DON'T STIR. Spinkle with cinnamon. Bake 30 - 40 minutes at 350 degrees.

Note: For regular Peach Cobbler use regular flour and omit the Xanthan Gum.
I've also made this with lite peaches and Slpenda and it's just as delicious and much lower in calories.

Note: I've also made this dessert using 6 cups of freah sliced peaches. All the rest of the ingredients remained the same.
